Mini apple crisps

Happy Monday!

We had a pretty good weekend together. I finally did that Body Revolution workout on Saturday, and my hip flexors are still feeling it. I knew my DOMS would be worse if I didn't work out at all on Sunday, so the hubby and I went down to the workout room early in the morning and did Insanity - pure cardio and abs. It was only 20 minutes and pretty easy, by Insanity standards.

My relationship with Insanity has been rocky...I did workout #1 over the summer, felt horrible for the rest of the day (elevated heart rate, dizzy, nauseous), got scared and haven't done another workout since :/ . Pure cardio and abs is totally manageable, but I may have to reconsider these high-impact workouts for the time being. Pounding it out with my workouts in addition to my work schedule is feeling like too much. I might stick with yoga and pilates for a while.

I had to work for a few hours on Sunday night doing inventory. It sounds boring, but it wasn't too bad, and I'm glad I learned how to do it for the future. This morning I had to drive out to Virginia, but I'm working at the location closer to me for the rest of the week. Half the driving time/commute is a very good thing. I know I said this last week, but this week I'm pretty sure I'll get closer to an answer about where I'm going in the company. Fingers crossed!

My hubby is currently babysitting his little cousins. Normally I'd go with him, but I'm exhausted from work and need to make sure I'm asleep early enough tonight. Can't risk a late bedtime, especially this early in the work week. I decided to kill time by using up some apples we had in the fridge, which I had grabbed from work over a week ago.

used coconut oil instead of butter, and threw them in the oven.


So ridiculously easy, and the apartment smells amazing. I'm eating one now, and saving one to top my oatmeal with tomorrow morning. Normally I don't like fruit, but these are baked out of recognition and smothered in brown sugar, oats and cinnamon. They're cute little apples crisps. 

I'm about to clean up, do some yoga to stretch out my sore legs, and pass out.
